500g all-purpose flour
1/2 teaspoon vinegar
1/2 teaspoon salt
220ml lukewarm water
50g MALVA EVOO
350g crushed feta chees
200g finely chopped spinach
200g finely chopped chervil
200g finely chopped Mediterranean hartwort
30ml MALVA EVOO
salt & pepper
✅ In a large bowl add the flour, salt, vinegar, water, olive oil and knead. When the dough is formed, place it onto your working surface and continue kneading by hand until smooth
✅ Transfer to a greased bowl, cover with plastic wrap and allow to rest for an hour.
✅ Mix the greens with the feta cheese. Add salt & pepper and set aside.
✅ When the dough is ready, use a sharp knife to cut it into 7 equal pieces and form into neat balls (100g each). Transfer each ball to a floured work surface and use a rolling pin to flatten it into a 30x25cm rectangle.
✅ Place 3-4 tablespoons of the filling in the centre of each rectangle and envelope fold. Repeat for all 7 pieces.
✅ In a frying pan heat the olive oil over medium to strong heat. Fry each side for 5 minutes, until they are golden.
✅ Remove, place them on paper towels, sprinkle with extra feta cheese, and serve.
