“LALAGIA”
Ingredients:
For the dough:
150g lukewarm water
1 teaspoon yeast
1 teaspoon granulated sugar 350g all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon cloves
50g MALVA EVOO
1 pinch salt
To fry:
400ml sunflower oil
To serve:
Malva Kalamata Olives, Greek Mixed Herbs & Spices, and Feta Cheese.
METHOD
✅ In a mixer’s bowl add the water, the yeast, and mix with a hand whisk.
✅ Add the sugar, the flour, the cinnamon, the cloves, the olive oil, and salt.
✅ Ideally, you should set the mixture aside for 15-20 minutes until the yeast is activated.
✅ Beat with the hook attachment at high speed, for 5-7 minutes, until the ingredients are homogenized and there is a firm dough.
✅ Transfer to a greased bowl, cover with plastic wrap and allow about 1 hour for the dough to double in volume.
✅ Place a frying pan with the sunflower oil over medium heat.
✅ Cut 30g of the dough and shape it into a strip, about 40cm.
✅ Wrap it in a spiral shape or however you like, and add it to the pan.
✅ Fry in batches for 3-4 minutes, until they are golden.
✅ Remove, place them on paper towels, and serve with olives, feta cheese, and greek mixed herbs & spices.
