Greek Recipes Halva

HOMEMADE SEMOLINA

“HALVA”

Ingredients:

For 6 – 12 serves:

1 cup MALVA EVOO
2 cups semolina (1 coarse and 1 fine)
3 cups granulated sugar 4 cups water
Orange zest (of 2 oranges)
1 teaspoon cinnamon powder
1/4 teaspoon clove powder
1 lemon & 1 orange peel
2 cinnamon sticks & 3 cloves
1 cup blanched almond slivers
1/4 of a cup raisins (optional)

METHOD

✅ Preheat the oven to 180° C set to fan.
✅ Slighlty roast the almond slivers in a shallow baking pan lined with parchment paper.
✅ In a non-stick pot saute the olive oil with the fine and coarse semolina, over medium-low heat. Stir the mixture continuously for about 6 minutes, until the semolina becomes golden brown.
✅ Add the cinnamon powder, the clove powder and the orange zest, stir and set aside.
❗️ Do not rush this process since semolina burns easily.
✅ In another pot, add the sugar, water, orange peel, lemon peel, cinnamon and cloves.
✅ Let the sugar dissolve and boil for a few minutes until it slightly thickens.
✅ When ready, add (very carefully) the hot syrup to the semolina pot.
✅ Stir until it thickens.
✅You will know it is ready when it starts to pull away from the bottom of the pan.
✅ Add the almonds and the raisins, and stir.
✅ Transfer the mixture into a cake mold and press it into to give your halva a nice shape.
✅ Turn it out after 10 minutes.
✅ Sprinkle some cinnamon, almond slivers and serve.
