Dressing: (Best if made the night before)


  • Cook 16 oz. penne pasta as directed. Drain and put in a large bowl.
  • Add vegetables of your choice. For a warm pasta salad use zucchini instead of cucumbers.
  • Chop 1-2 English cucumber
  • Dice 1 small red onion or a bunch of green onions
  • Slice grape or cherry tomatoes in half
  • Dice a red, yellow and green peppers
  • Slice 1/2 cup (or more) Truly Greek Country Olives
  • Toss ingredients together with dressing. Sprinkle feta on top.
