Olive Oil Dipping Sauces

SIMPLE PAIRINGS THAT LET THE OLIVE OIL DO THE HEAVY LIFTING

Olive oil dipping sauces are one of the simplest expressions of Mediterranean cooking. It usually needs very few ingredients and no heat, so there is often no room for imbalance. However, this means that every herb, every aromatic, and every drop of extra virgin olive oil matters.

The primal core of every delicious olive oil dipping sauce is high-quality extra virgin olive oil. It has a distinct flavor that carries herbs and spices evenly, and its viscosity creates body without unnecessary thickness, balancing the salts and acids of other ingredients. From there, the sauce becomes a matter of pairing—matching intensity to texture and freshness to fat.

Everyday Greek Herb and Olive Oil Dip

(Best for crusty bread, roasted potatoes, and vegetables)
This is the most versatile olive oil dip in Greek kitchens. It is heavy on herbs, lightly aromatic, and works both as a table dip or a finishing drizzle.

Ingredients

Method
Stir all ingredients together and allow to rest for 10 to 15 minutes before serving.

Lemon and Oregano Olive Oil Dip

(Best for grilled chicken, lamb, flatbreads)

The acidity of this dip is perfect for sharpening the taste of fatty protein cuts. It is best used fresh.

Ingredients

Method
Whisk all the ingredients together until it is lightly emulsified. Serve along with any meat or flatbread.

Garlic and Chili Olive Oil Dip

(Best for grilled bread, roasted meats, hearty vegetables)

This dip has a spicy, bold flavor, but the heat is not dominant. The oil disperses it evenly to prevent the spice from concentrating in any one bite. It is best paired with charred or toasted foods.

Ingredients

Method
Combine the ingredients and allow it to for at least 15 minutes before serving.

Olive, Capers and Herb Oil Dip

(Best for cheese boards, seafood, crusty bread)

The briny flavor of this dip is the perfect salt and umami kick that mild, creamy foods need.  It cuts through richness, while olive oil smooths sharp edges.

Ingredients

Method
Combine the ingredients, but stir gently to avoid breaking the olives too much.

Warm Rosemary and Garlic Olive Oil

(Best for focaccia, roasted potatoes, lamb)

This is a lightly warmed dip, excellent for breads and toasted meats. The heat helps to unlock the aromatics.

Ingredients

Method
Warm gently over low heat for 3 and 4 minutes. Do not fry. Remove from heat and rest before serving.

Choosing The Right Oil

Olive oil dipping sauces leave little room for correction. With no heat, no emulsifiers, and no heavy layering, the quality of the oil determines the outcome almost immediately. This is why extra virgin olive oil is not just an ingredient in these recipes—it is the foundation.

Truly Greek Classic Extra Virgin Olive Oil and Truly Greek Premium 0.2 Extra Virgin Olive Oil are produced to perform in their purest applications. Cold-extracted and naturally low in acidity, both oils provide the balance, aroma, and body that simple dips rely on. The original extra virgin olive oil offers a smooth, everyday profile for herb-forward and briny pairings, while the Premium 0.2 brings greater intensity and complexity suited to garlic, chili, and warm aromatic dips.

Because when the oil is right, very little else is required.
